This fully washed Guji comes from producer Biru Bekele's washing staton in the Shakiso area, where a co-op of smallholder producers have perfected the art of clean, bright washed processing. Processed using modern systems that allow for precise control in the pulping, fermenting, and washing, this lot is special for its clarity, revealing the inherent character of Guji's terroir — floral aromatics, stone fruit sweetness, and a sparkling citrus acidity. This clarity comes from the washing station's. The co-op has also invested heavily in water recycling systems.
