One of our importers, Covoya Specialty Coffee, fell so in love with Guatemala's
Santa Rosa department that they decided to rent a mill on a Rainforest Alliance-
certified farm to collect the best coffees from small farms in the area. This coffee is
named for the Laguna de Ayarza, a crater lake formed by two collapsed volcanoes.
The area's rich volcanic soil and various micro-climates are ideal for growing coffee.
